Red lentil curry


Ingredients

    • 1 1/2 fl. red lentils 
    • 4 tablespoons of olive oil 
    • 1 medium chopped onion 
    • 4 cloves of chopped garlic 
    • 1 1/2 tablespoon of curry powder 
    • 1 chopped tomato 
    • 1 liter of vegetable broth 
    • salt 
    • 6 tbsp strained yoghurt 
    • a little chopped parsley



Method
Heat the olive oil in a saucepan and add the onion and garlic. You dwell on moderate fire for 3 to 4 minutes. Add curry and cook all together for about 2 minutes, stirring regularly.
Add tomato, broth and lentils. When boiled, lower the heat and cover the pot. Simmer until lentils are soft (15 - 20 minutes are usually enough).
Try it and add salt if necessary. Serve with yogurt and chopped parsley.
