Ingredients
- 1 1/2 fl. red lentils
- 4 tablespoons of olive oil
- 1 medium chopped onion
- 4 cloves of chopped garlic
- 1 1/2 tablespoon of curry powder
- 1 chopped tomato
- 1 liter of vegetable broth
- salt
- 6 tbsp strained yoghurt
- a little chopped parsley
Method
Heat the olive oil in a saucepan and add the onion and garlic. You dwell on moderate fire for 3 to 4 minutes. Add curry and cook all together for about 2 minutes, stirring regularly.Add tomato, broth and lentils. When boiled, lower the heat and cover the pot. Simmer until lentils are soft (15 - 20 minutes are usually enough).
Try it and add salt if necessary. Serve with yogurt and chopped parsley.
