Ingredients
- 1/2 kilogram of intestine or gouda
- 100 g quadrant (or half-a-half with cheddar)
- 200 g kefalotyri
- 3 eggs

Method
1. Grate the cheese on the coarse grater and leave it at room temperature so we can make it easier.2. Pour some white pepper and add the beaten eggs. Stir well and add the flour.
3. Make sure the mixture is firm and homogeneous.
4. Roll balls, fry and fry in olive oil until golden brown and put them on absorbent paper for a while.
